The food supply chain has been significantly affected by the onset of Covid-19, and many companies have had to pivot to better position themselves to succeed during unprecedented times. Uncertain supply and demand caused by economic shutdowns worldwide have created problems for small to medium-sized food manufacturers, co-packers, and restaurants. The following trends presented in this paper, backed by primary research from a number of food companies around the United States, highlight the current state of the industry and provide insight into how technology can be leveraged to help alleviate industry problems emphasized by the onset of Covid-19.
